Black bean and garlic mushrooms and spinach

Recipe for mushrooms and spinach in black bean and garlic sauce Here's my little secret: sometimes I cheat.

I buy ready-made pastry, because my own pastry is mediocre at best.

I buy jars of minced garlic and ginger, as it saves me time, and means I always have a supply on hand.

And I make black bean sauce using a jar of black bean sauce paste. Simple!

This sauce can be quite salty, so I only eat this as a side dish, rather than a veggie main.

Recipe

1 tsp oil
1 onion, thinly sliced
2 cups mushrooms, quartered or halved (depending on size)
2 cups spinach leaves
2 tsp minced garlic
1 heaped tsp prepared black-bean and garlic sauce (I use Lee Kum Kee brand)
Splash water

In a large pan, heat the oil over high heat. Add the onions and cook 1-2 minutes, until softened.

Add the mushrooms and cook another 2 minutes, until the mushrooms and onions are nearly done.

Add the garlic, cook a few seconds, then add the black bean sauce and a splash of water. Stir well, and cook 1 minute, then finally add the spinach and stir everything until the spinach leaves are wilted and everything is covered in the sauce.

Serves: 3-4
Preparation and cooking time: 6-7 minutes
