Sambal squid

I made this dish as part of a Malay feast for a friend of mine.

It's very flavourful, although not the prettiest dish ever. The chilli and tomato sauce perfectly complements the tender squid, but would also work well with prawns or other seafood.

Recipe

1 tsp oil
1 tsp shrimp paste
1 tsp peanut butter (or the equivalent amount of crushed peanuts or candlenuts)
2 tsp minced garlic
1/2 onion or shallot, finely diced or minced
1 tsp jaggery or brown sugar
2-3 tsp minced chillies, depending on taste
1 tbsp tamarind paste
1 large tomato, diced
4 small squid, cleaned
lime juice to taste

Heat the oil in a small pan. Add the shrimp paste, peanut butter, garlic and onion, and saute a couple of minutes, until the onion softens.

Add the jaggery, chillies, tamarind and tomato, and cook a couple of minutes, until the sauce reduces.

Add the squid, and cook very quickly until just done (they will only take a couple of minutes, maximum). Add lime juice to taste and serve.
