Sinigang is a hugely popular sour fish soup from the Philippines. I haven't been fortunate enough to travel to the Philippines yet, so I'm afraid I have no idea how authentic this recipe is. I just know it tastes good. | |
Recipe
1 tsp oil1 large onion, diced
1 tin tomatoes
1 large sweet potato, cut into bite-sized chunks
100g green beans (I used peas as I was out of beans)
2 cups fish stock
1 tbsp tamarind pulp
pepper
200g firm fillets of fish, cut into large chunks OR one package of fishballs (for lazy cooks like me)
100g spinach
handful of cooked shrimp
splash of fish sauce
Heat the oil and soften the onion.
Add the tomatoes, sweet potato, and green beans. Add the stock and simmer 5 minutes. Stir in the tamarind and the pepper.
Add the fish and simmer 5 minutes gently until the fish is almost cooked. Add the spinach, shrimp and fish sauce to taste, and heat gently until the spinach is wilted and the prawns hot.
Serve with rice.
Serves: 3-4
